As you probably can already imagine, I spend a fair amount of time sitting pool side at The Standard, Miami recovering from (and trying to remember) the night before. There is only thing that can expedite the recovery and that’s Chef Mark Zeitouni’s huevos rancheros. Actually, since I eat them so often, he as selflessly renamed them STAN D’ARDE’S HUEVOS RANCHEROS! Olé! (I threw that last bit in there…)
These morsels of Mexican heaven are like a drunken caballero dance on the taste buds!
First, Chef heats up a warm tortilla then tops it with black bean purée, adds tree ripened Florida avocados, queso fresco, homemade ancho chipotle hot sauce and finishes it off with two perfectly poached eggs.
Honestly, don’t even call me crying over how to get one. Just drive, fly, catch a train, ride a bike, rollerblade, salsa, merengue or whatever you have to do to get yourself in front of a plate of this Stan D’eliciousness!!!
