Hamachi at The Standard Grill

When you live in a world, like I do, where every day is filled with culinary delights beyond your wildest imagination, you start to lose a grip on the simpler things in life. What? Not every omelette is served with a dollop of créme fraîche and caviar? You don’t say!

The other day, Chef Dan Silverman pulled me aside and asked me to come to the kitchen to try his latest creation, and if you know anything, that’s an invitation you do NOT decline. What came next was a medley of surprises on a plate which even I couldn’t wrap my head around. Ladies and Gentlemen, I present to you Chef Silverman’s Hamachi Salad!

This light salad is a wonder in itself, designed to surprise and to create awe. Chef Silverman starts with a fresh salad of olives, capers, celery and golden raisins lightly dressed in a honey vinaigrette which he hand makes at The Standard Grill. He then finds the freshest hamachi on the market…(to us non-Japanese speaking folk, hamachi is baby yellowtail sliced thin and served in various states of amazement)…and to finish, he adds a bit a of Uni, or sea urchin, on top.

With this one plate, Chef Silverman embodies the creativity upon which The Standard Grill is based. A little bit savory balanced with a touch of sweetness, the salad is the new cornerstone of American cooking. Trust me.
