Since its opening, The Standard Grill has served a variant of this underwater creature as seen through the eyes of Chef Dan Silverman. It’s popularity is only surpassed by its simplicity. The tentacles are grilled until they are lightly charred and delectably tender…and that’s the easy part.
The genius that is this dish is what lies beneath. Chef Dan serves the octopus on a bed of roasted sweet potato and red onion salad which is a vibrant mix sweet potatoes, onion, cilantro jalapeño and lime. Perfection can only be defined in this way.
